There are stove-top & table-top versions. The table-top versions will add a bit of showmanship to coffee brewing! The problem with AeroPress Or French Press methods, is that the hot water can sometimes cool too quickly during the brew process...not so with a vac-pot. With a combination of alchemy & physics, you watch your brewer force hot water from the boiler to the grounds, after which amazing coffee is vacuumed back, thru the filter, when the heat source is removed!

About these interesting brewers: Also known as vacuum coffee brewing, the "vac pot" or siphon coffee-maker was invented in the 1840s/1850s more or less simultaneously by a French housewife and Scottish marine engineer. The design has been refined many times over the years, but a few principles hold true. Together with the French Press, the quality of the brew ranks at the top of the list. Many coffee buffs claim that vacuum/siphon pots produce the finest, cleanest cup of coffee, that is almost tea-like in clarity, flavor & aroma.

These units were popular for over a hundred years, and then almost disappeared with the advent of electric percolators, followed by automatic drip coffee-makers. But, true coffee connoisseurs are rediscovering them and we are glad to be able to introduce new generations of coffee-lovers to this wonderful, though slightly "kookie" device. Once you get the hang of the slightly "persnickety" process and taste the result, you won't go back to "dripping" again!

This pictures show use of a butane burner, but the process is the same regardless of the heat source. These pics are detailed, but don't let this scare you off. The brewing is hands-on, but easy once you understand the process. If the Belgian Balancing unit is used, a good part of the process is automated. Either way, it is a bit of a show that also produces a heavenly brew:
